and then he debuted in the kitchen as my sous-chef, helping me chop, saute, and grab ingredients as we cooked dinner for my mom. We made tomato-basil bruschetta, coconut shrimp with mango ginger dip and sun-dried tomato marinated beef tenderloin! The beef and bruschetta were out of this world! The shrimp was just okay. All those things were a first for me... I really liked cooking with such fancy shmancy ingredients- shrimp, steaks, toasted coconut, sundried tomatoes, red onions, feta cheese, mango chutney, ginger and parsley... yum.
And for dessert I made oober cute mallow cookie sandwiches.
My Cuban grandparents stopped by to wish my mom a happy birthday (they couldn't wait til Friday... apparently). And in good Cuban grandmother fashion, my abuelita said as she was leaving, "El año que vienes, tu nos vás a preparar una cena especial, y vamos a comer con Uds. y el barón mas guapo de Miami!" (next year, you're going to cook us a special dinner and we'll eat with you guys and the most handsome young man in Miami) That's kind of what makes yesterday Single Awareness Day... oh well, I've gotta say- we had a great time!! I wouldn't trade it :)
