Back by popular demand on Saturday, I made Thai Chicken Pizza again. It was good, though I think it needs tweaking. Anyway, the sauce is serious. The chicken is abundant. The pizza dough is intimidating. Even when it's all done and risen and ready to go in the oven, it's still so sensitive. You have to have flour on the dough, flour on the pizza stone, flour flour everywhere!! And that rude little pizza crust had the audacity- NAY, the attitude, to do THIS:

I freaked out. Fortunately, both mom and Yannick were on hand to keep me from hyperventilating. We stabbed that sucker with a knife, and pressed out this rude little bubble. That's right, I think it was rude. How dare it nearly explode while it is being meticulously baked and transformed into a beautiful, gourmet pizza?
Anyway, it was not as rude as this:

They look cute, right? WRONG! I had visions and dreams of taking cute mini-muffins with cute mini-choc chips to small group tonight. Pffft. If only...
I made the batter, painstakingly poured it into one-inch paper cups and put the little babies in the oven. Once they were in, I started cleaning up. Threw away the egg shells, put away the oil. And just as I took the measuring cup over to the sink, I noticed there was oil in it. And not a drop.... no, no. A 1/4 cup. Which was interesting, because that was exactly how much I had put in the batter. How neat!, I thought...The measuring cup had magically refilled itself. That happy little thought lasted about a milisecond, until I realized that the oil never made its way into the batter. After everything, I had left the oil out! And I was not about to take the batter out of each miniscule paper liner. Yeah right. So, though they look cute, they in fact were decidedly NOT cute. They were dry and stuck to the liners.
I hope this passes. I don't know what will become of this blog if food decides to keep sabotaging me. What's Cookin will have to become, What's burnin'? or What's disgustin'? or something less adventurous and not food-related, like 'What's happenin'? That would be sad and lame...

u're still a better cook than i am! my idea of cooking involves a drive thru window and french fries!
Personally, I think you should bring your cooking chops to my kitchen and see if your mojo returns. I'm sure some of Angie's could rub off on you.
This will not happen when we have our Benihana night!!! lol. It'll be a challenge...but I see good things in our future. Yummy things. ;-)
